I know I'm not Mike but I have no desire for ambi safeties on 1911's anymore. I've had one break and so have 2 buddies. They require a lot of keeping up with. If I were a lefty and needed one I'd put a pin in the frame to stop the downward motion of the right side paddle. I've seen Mike do this on at least one gun. The SV safety is a frigging work of art, but mine would not stay nicely tensioned for any length of time.
For a game gun I've learned to sweep the thing off then transfer over to the weak hand and shoot. It works fine.

I have small hands too. I installed the thin VZ grips on my S&W 1911 and that did a world of good. Perhaps this may help you too.
