I can tell you how to make tamales if you're seriously interested. They're a lot of work but make for an incredible meal. I think I was Mexican in my former life.

Got a PizzaKettle insert for one of my Webers. Made the dough and sauce from scratch. Struggled to shape and stretch the dough so that will take some practice. The sauce was the real star. It was amazing. Going to have to play with the temps with this setup. Grilled eight pizzas this evening.
