For the rimfire, are dot sights allowed? Does the pin have to fall off a table?

Yes red dots are allowed. All 5 pins must be completely off the table for the time to stop.

I've never shot a bowling pin with a .22, is it possible to make them fall off the table with 1 shot or is it a flurry of bullets that puts them down?

Very doable with a 22 in five shots. It is about shot placement more than anything.
